Molecular characterization of genes involved in bacteriocin production in lactic acid bacteria. Developing of rapid detection methods to monitor mycotoxigenic molds in food. Application of bacteriocins in food systems to extend its shelf-life and to control pathogens. Inoculation of rat’s large intestine with butyrate-producing bacteria: effect on colorectal cancer development.
